Go to Settings → Employees & invites, click the person's name, then click the Email value in the Profile block, type the new address, and click the green check to save.
Read the next section before you do it. The email address is how that person signs in, so this is not the same kind of edit as fixing a phone number.

Steps
Tell the person first, and agree on the new address with them.
Click your name at the bottom of the left sidebar, then click Settings.
Under ORGANIZATION, click Employees & invites.
Click the person's name to open Employee details.
In the Profile block, click the current Email value. It becomes editable in place, and a green check to save and an X to cancel appear beside it.
Type the new address. Check it character by character before you commit.
Click the green check to save.
What happens next
The email address is the person's login identity. Changing it changes how they sign in. From that point they use the new address, not the old one, and anyone still typing the old address will not get in.
Notifications for that person also follow the address on this record, so system email goes to the new inbox once the change is saved.
If this doesn't work
They cannot sign in after the change → confirm they are using the new address, not the old one, and confirm the address saved on the record has no typo. Open their Employee details and read the Email value back.
Clicking the Email value does nothing → your role does not have permission to edit team member records. Ask an Admin in your account.
The person never accepted their invitation in the first place → fix the address here first, then deal with the invitation. Resending to the old address will not help.
The person is leaving the company → do not repoint their email to somebody else. Remove them and invite the new person, so the activity history stays attached to the right individual.
